I have always liked chicken pot pie, but then again I’ve only ever eaten it out of the package in the frozen food section where it came from. After using this recipe however, may I just say… I AM IN LOVE! Too much maybe?
It tasted so fresh and we used healthy ingredients to make some of it from scratch. We didn’t make our crusts from scratch, and bought frozen veggies like the recipe said, but next time we make it we are definitely going to buy the vegetables raw and cook them into it for an even fresher taste.
Here are the ingredients we used:
Simple Truth Skinless & Boneless Chicken Tenders
2 Cans Cream of Chicken Soup
1 Cup of Milk
2 Cups Frozen Mixed Vegetables*
Salt and Pepper to Taste
2 Pie Crusts (store bought or made from scratch)
Cook chicken and veggies, then mix them + milk and soup in a large bowl. Put crusts in a square pan, one on the bottom and one over top of pot pie mixture. Cook at 375 for 45 minutes or until the crust is golden brown. The total prep/cooking time was about an hour. Here is the finished product:

For example, neither Nick nor I had any idea what “thyme” was. We probably spent a good 15 minutes looking in the spices section at Kroger when we found out it was actually a type of herb!
Also, you can purchase the ingredients from any local store, we just prefer Kroger because of their awesome health and fresh foods selection, as well as saving with our Kroger Plus Card.
This is a super easy to prepare meal and very cheap, which works perfect when you are on a tight budget. We even had leftovers to each for lunch the next day!
